1. Violation of : 6-1A. Proper cold holding temperatures (A box of raw chicken sitting on prep table next to fryer in temperature danger zone — 41 degrees to 135 degrees. Corrected on site by discarding chicken. Only bring out small portions at a time to fryer.
2. Violation of : 6-1B. Proper hot holding temperatures (Cooked chicken held in fryer baskets in temperature danger zone — 41 degrees to 135 degrees. Corrected on site by refrying chicken to more than 165 degrees for 15 seconds. Par cooking chicken not allowed. Once chicken is cooked it must be hot held at 135 degrees, or higher, or cooled properly to 41 degrees or below.
   Non-critical violations:

1. Violation of : 1-2. Person in charge present, demonstrates knowledge and performs duties (Certified food safety manager certification expired on May 11, 2011.)
2. Violation of : 4-2B. Food-contact surfaces: cleaned & sanitized (Ice machine with excessive slime mold build-up on deflector shield inside machine. *REPEAT VIOLATION. Advised person in charge to empty, wash, rinse and sanitize inside ice machine.)
