Barrow County Restaurant Inspections for Jan. 2, 2013: Foods Held at Incorrect Temperatures, Improper Cooling Methods Used

The Northeast Health District reports the following health inspection scores for Barrow County.

  • Violation of: 6-1A. Proper cold holding temperatures (TCS foods held in temperature danger zone 41 to 135 degrees in left prep table, i.e. diced tomatoes, sliced tomatoes, chicken, slaw and sliced cheese in reach-in under prep table. Corrected on site by discarding TCS food out of temp, adjusting thermostat on cooler. Cooler operating at 34 degrees.)

Proper cooling methods used; adequate equipment for temperature control (Pasta cooling with lid in plastic container, 56 degrees after two hours moved to top shelf, loosely covered. Sliced tomatoes not cooled to less than 41 degrees before placing at prep line. Corrected on site by moving to walk-in to cool.) 
  • Violation of: 17B. Garbage/refuse properly disposed; facilities maintained (Grease on pad around grease trap (run-off with rain).

  • Violation of: 14A. In-use utensils: properly stored (Scoop for flour stored hanging on wall. Corrected on site by instructing person in charge to wash, rinse and sanitize scoop and store in clean container or in product with handle out. 
  • Violation of: 14B. Utensils, equipment and linens: properly stored, dried, handled (Dishes stacked wet, not allowed to air dry.) 
  • Violation of: 14C. Single-use/single-service articles: properly stored, used (Single service cups and drive thru not stored in protective sleeve. *REPEAT)
