Violations Observed During Recent Restaurant Inspections Include Malfunctioning Equipment and Improper Cooling Methods

The Northeast Health District reports the following health inspection scores for Barrow County.

The Georgia Club Golf Club, 1050 Chancellors Drive, Statham 
Score: 82
Date of routine inspection: April 10, 2013
Critical violation: 

  • Violation of: 6-1A. Proper cold holding temperatures (Potentially hazardous foods in temperature danger zone 41 degrees to 135 degrees in multiple coolers — i.e. double door reach-in at salad prep station and single door reach-in at service line. Prep table at grill. Corrected on site by discarding all out of temp food products.)

  • Violation of: 4-2B. Food-contact surfaces: cleaned & sanitized (Heat sanitizing dish machine in main kitchen not reaching proper temperatures to achieve heat sanitization. CA: Use three-compartment sink to wash, rinse and sanitize until dish machine has been repaired and operating correctly.) 
  • Violation of : 9-2. Compliance with variance, specialized process and HACCP plan process and HACCP (Reduced oxygen package chow-chow found in reach-in cooler. All reduced oxygen packaged products if desired to be prepared in house must have a variance and an HACCP. Corrected on site by discarding five containers of chow-chow.) 
  • Violation of : 15A. Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used (Double door reach-in cooler in salad prep and single door reach-in at service line not maintaining proper internal food temps, and prep table at grill. Have coolers serviced and service kitchen AC to lower kitchen ambient temp to ensure coolers can function properly. Discontinue use of heat lamp over prep table at grill and keep lids closed.)

  • Violation of: 11A. Proper cooling methods used; adequate equipment for temperature control (Oil not placed in refrigeration to rapidly cool. Prepped 1 hour, 90*, moved to cooler in shallow pan to cool rapidly. Corrected on site.) 
  • Violation of: 12C. Wiping cloths: properly used and stored (Wet wiping cloths not stored in sanitizer solution.) 
  • Violation of: 15A. Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used (Cardboard used as shelf liner.)

Date of routine inspection: April 3, 2013
Non-critical violation: 

  • Violation of: 11A. Proper cooling methods used; adequate equipment for temperature control (Potatoes cooling in the walk-in cooler were tightly covered. The potatoes were uncovered to continue the cooling process. Advised the person in charged to monitor the cooling temperatures and times. Corrected on site.)
