Creole Potato Salad is Perfect Side Dish for Memorial Day Gathering

Planning to grill out this weekend or have a picnic? Creole potato salad goes well with burgers, hot dogs and more.

 

Potato salad is often a bland and boring side dish, but that does not have to be the case. Creole potato salad has a spicy, Cajun flavor that makes this side dish a great addition to any cookout or picnic.

This potato salad can be served cold or hot (I like both). You can also add some Creole seasoning if you want to spice it up even further.

Ingredients

3 pounds of red potatoes, boiled until tender and cubed (I leave the skins on)

1/2 cup mayonnaise (Duke's is my preference)

1 5.25-ounce bottle of Zatarain's Creole mustard

1 tbsp. red wine vinegar

1 tsp. salt (I prefer to use Creole seasoning)

1 tsp. prepared horseradish

1/2 tsp. dried thyme

1/2 tsp. garlic powder

1/4 tsp. ground red pepper

6 hard boiled eggs, chopped

1 medium red onion, chopped

Directions

Combine mayonnaise, Creole mustard and next six ingredients in a large bowl. Add potatoes, onion and eggs. Mix well. Serve hot or chilled.
